2024 Phoenix Oolong
Harvested April 2024.
Phoenix Dan Cong is an exquisite Oolong Tea produced in the Phoenix Mountain region of Guangdong Province.
Long slender leaves are picked in Spring, oxidised and lightly roasted. The flavour is sweet, floral and long lasting.
This is a Mi Lan Xiang Phoenix Oolong, which translates as Honey Orchid.
The leaves go through several roastings before the sweet honey, orchid and lychee fruit flavours develop.

Brewing
1-2 heaped teaspoons (one big pinch) per cup and add water that is just off the boil, at around 90 degrees. Infuse for 2 minutes.
To really experience the tea, use just enough water for very small cup pour off the first infusion after around 30 seconds, the second leave for 45, the third for 1 minute and so on. You will then experience the journey through the sweetness of honey and into the floral orchid notes the tea begins to offer. Continue like this until you are not happy with the flavour.
